This invention relates to the poultry industry, namely cutting of whole poultry carcasses or their front part in order to obtain fillets. A known method for producing fillets when cutting whole bird carcasses or their front part involves fixing carcasses on conveyor retention means provided with protrusions, and separating meat from the sternum bone and clavicle (1). The disadvantage of this method lies in the small yield of meat and the deterioration of the quality of cutting due to the fact that a significant part of the poultry carcasses entering the cutting, due to preparatory operations, often have a broken collarbone, which requires additional trimming of the meat in the clavicle area. A device for producing fillets for cutting whole poultry carcasses or their front part is known, comprising a drive conveyor with protruding retaining means for planting poultry carcasses and knife mechanisms for separating meat from the sternum and clavicle. This device has the same disadvantages as the method. The aim of the invention, both in terms of the method and the device, is to increase the yield of meat and improve the quality of the cutting. The purpose of the invention in terms of the method is achieved in that the carcasses are fixed on the retaining means by the chest bone and the clavicle forward, before the separation of the bone from the clavicle is fixed by inserting the locking element with grooves into the cavity of the carcass, and closing it with protrusion retaining means and cutting the tendons located in the region of the joints of the wings at the ends of the scapular bones. The object of the invention in terms of the device is achieved by the fact that the cutter carriages on the installed carcasses on the rod installed with the possibility of controlled rotation reinforce the wedge-shaped block with means of alignment relative to the retaining means behind the knife mechanisms over the path of movement, and the sides of the block are bent respectively of its surface, grooves for interacting with the latter, and a knife mechanism for separating the melanoma from the clavicle is formed by a pair of mutually spring-loaded plate knives, the cutting edges of which are bent and facing the side surfaces of the block and installed with the possibility of displacement along the height and retraction away from the conveyor, each retaining means being made so that it ensures that the carcasses sit down with the breast bone upwards and the clavicle forward. A knife mechanism 8 for separating meat from the sternum, made in the form of a pair of circular knives, is located above the conveyor belt. The device also contains a collar 9 installed with the possibility of controlling the gate 5, located above the path of movement of the carcasses being processed by the conveyor, on which the shaped wedge-shaped shoe 10 is fastened. This block is located in the middle of the path of the holding means 2 and, due to rotation, can lead into a lip with a protrusion 3 holding means. The rotary movement of the shaped block 10 is provided with the power of a cam mechanism 11 moving synchronously with the conveyor 1. The shaped block 10 is depicted in a position that corresponds to its final position after passing the carcass of the domestic bird 1. First, the cam mechanism 12 provided the cam mechanism 11, which turned the axis of 13 swings with the help of acting on the pivoting lever 14, held 5 by a spring 15 of a roller pusher 16, secondly, a temporary drag of the shaped block 10 at the moment of its closure with a protrusion of 3 retaining means. Its sides are curved in accordance with the curve of the clavicle branches. The knives 20 are installed in such a way that their ends 22 are directly above the plane of the supporting surfaces 4 the holding means 2. The knives 20 are fixed on the supporting brackets 23, which are mounted rotatably in vertical planes, the knives 20 deflecting upwards, i.e. in height against the direction of action of the force of the springs 24. The carrier brackets 23 are installed respectively with the possibility of rotation around the vertical axes 25 in the cantilever 26. Both axles 25 are coaxially synchronized with respect to their rotational movement by means of synchronization means 27. In addition, with one of these axes 25, a drive lever 28 engages, which by means of the rocker arm 29 is connected to the second roller pusher 30, which, under the influence of the spring force 31, can be supported on the second cam disc 32 of the cam mechanism 11. These assemblies provide for the removal of knives away from the conveyor. The device works as follows. Freed from the extremities by separating the wings from the joints and legs by means of a transverse incision that separates the pelvis with the legs, and thus the poultry carcass in the shape of the front half is secured by the chest bone 33 upwards and the clavicle forward on the retaining means 2.
